The Shiori Hamburg Shōto professional kitchen knife has a blade made of high quality german steel 1.4116, which is characterized by durability, sharpness and resistance to corrosion under kitchen conditions. Achieves hardness of steel 56 +/-1 on the Rockwell scale*. High level of sharpness is achieved through traditional cutting and sharpening technology. This model of kitchen knife has a blade grinding angle of 15 degrees. Even with daily use, the edges will remain sharp for a long time. Of course, the focus can be maintained at home with a shiori sharpening nibs.
Blade Shiori Hamburg Shōto is 7 cm long and is specially contoured which makes it perfect for peeling and cleaning fruits and vegetables. The width of the wedge, which in this model is 1.5 cm, also plays an important role.

- Each handle is manufactured from natural olive wood, that's why it may look different from the picture.
- The blade has been factory oiled in order to protect against corrosion. Before the first use wash the knife thoroughly and then dry it. Only then is it ready for use.
- HRC hardness - this is a criterion to determine the class of the knife, expressed in degrees HRC (Rockwell scale). Tells us how hard the steel used to make the knife is. The higher the value expressed in HRC degrees, the better the steel from which the knife was forged, and thus the blade will stay sharp longer and require less frequent sharpening.
